Making a cheesecake usually sounds so hard and time-consuming. That is not the case with this amazing coconut cocoa cheesecake recipe. It is vegan and very tasty. You can give the recipe a go, and everyone will ask you to make it again.

Ingredients:

Crust

For the crust of the coconut cocoa cheesecake, you’ll need 2 cups pitted Medjool dates, 3 cups walnuts. 1 teaspoon vanilla, a dash of sea salt.

Filling

To make the filling, get 1/2 teaspoon vanilla, 1/4 cup lemon juice, 1/3 cup maple syrup, 1/3 cup melted coconut oil, 1 1/2 soaked and rinsed cups raw cashews, 1 1/2 cup coconut flakes, 1/3 cup cocoa powder, 1/2 teaspoon sea salt, one 14-ounce can full-fat coconut milk.

Method:

Put the walnuts, vanilla, sea salt and dates in a blender and blend them together very well. When you get a dough put it on a 9-inch pan. Put the pan in the fridge for around half an hour. Get all the ingredients for the filling and blend them together in the blender. Use low speed. Get the pan out from the freezer and cover the dough with the filling mix. Put the coconut cocoa cheesecake back in the freezer for around two hours. Decorate it with some cocoa and coconut flakes.

So yesterday…rough. Awful. Cried a lot. If you missed what happened, check my stories for the recap. I have to tell you something that I didn’t in stories. Yesterday, for a brief moment, I wanted to put this profile back to private or quit it all together. Going crazy on ME is one thing…someone roping my family into it is QUITE another. All I thought about yesterday was them. I’m here to share HOME DECOR INSPIRATION. I’m here for a creative outlet for the ever spinning wheels in my brain. I’m here to see if anyone wants to laugh at a bad joke. You hear big accounts talk about “trolls” all the time. Sometimes they show it, sometimes they don’t. I’ve been one to show it. Not for attention or to even be mean to the person who said something to me. But to show that this DOES happen. These people find joy in trying to hurt others. By nature, I am an emotional person. I worry a lot & it can take me awhile to get out of my head, out of my anxiety & into a better mental space. But what about the people who can’t pull themselves out? What about the people who can’t make a joke out of it and shake it off? How do we help them? These are the things in life that make me so angry. And they make me feel helpless. I’m strong enough to move past it eventually & I have an amazing support system behind me in all of you but most importantly, my family. It breaks my heart to think about the people who feel alone when they face these types of people. Raising kids in this world is the scariest thing I’ve ever done. I’m certainly not going to sit back & watch people come after my family on Instagram or any other social media platform. So, yesterday, the trolls almost won. ALMOST. I sat in bed last night eating all the carbs & ice cream I could find & thought about the day. Then I thought…what does it teach my kids if I quit on my dream? How will they learn to handle real life jerks if I lay down & let them win? How will they learn to conquer their fears & push past it into bigger & better things? So…not today, Trolls. Not ever. I’ve got some little eyes watching me & they deserve my best example. But today, I’ll pray for the hearts of the people who want to see me fall ❤

Making a cheesecake usually sounds so hard and time-consuming. That is not the case with this amazing coconut cocoa cheesecake recipe. It is vegan and very tasty. You can give the recipe a go, and everyone will ask you to make it again.

Ingredients:

Crust

For the crust of the coconut cocoa cheesecake, you’ll need 2 cups pitted Medjool dates, 3 cups walnuts. 1 teaspoon vanilla, a dash of sea salt.

Filling

To make the filling, get 1/2 teaspoon vanilla, 1/4 cup lemon juice, 1/3 cup maple syrup, 1/3 cup melted coconut oil, 1 1/2 soaked and rinsed cups raw cashews, 1 1/2 cup coconut flakes, 1/3 cup cocoa powder, 1/2 teaspoon sea salt, one 14-ounce can full-fat coconut milk.

Method:

Put the walnuts, vanilla, sea salt and dates in a blender and blend them together very well. When you get a dough put it on a 9-inch pan. Put the pan in the fridge for around half an hour. Get all the ingredients for the filling and blend them together in the blender. Use low speed. Get the pan out from the freezer and cover the dough with the filling mix. Put the coconut cocoa cheesecake back in the freezer for around two hours. Decorate it with some cocoa and coconut flakes.

So yesterday…rough. Awful. Cried a lot. If you missed what happened, check my stories for the recap. I have to tell you something that I didn’t in stories. Yesterday, for a brief moment, I wanted to put this profile back to private or quit it all together. Going crazy on ME is one thing…someone roping my family into it is QUITE another. All I thought about yesterday was them. I’m here to share HOME DECOR INSPIRATION. I’m here for a creative outlet for the ever spinning wheels in my brain. I’m here to see if anyone wants to laugh at a bad joke. You hear big accounts talk about “trolls” all the time. Sometimes they show it, sometimes they don’t. I’ve been one to show it. Not for attention or to even be mean to the person who said something to me. But to show that this DOES happen. These people find joy in trying to hurt others. By nature, I am an emotional person. I worry a lot & it can take me awhile to get out of my head, out of my anxiety & into a better mental space. But what about the people who can’t pull themselves out? What about the people who can’t make a joke out of it and shake it off? How do we help them? These are the things in life that make me so angry. And they make me feel helpless. I’m strong enough to move past it eventually & I have an amazing support system behind me in all of you but most importantly, my family. It breaks my heart to think about the people who feel alone when they face these types of people. Raising kids in this world is the scariest thing I’ve ever done. I’m certainly not going to sit back & watch people come after my family on Instagram or any other social media platform. So, yesterday, the trolls almost won. ALMOST. I sat in bed last night eating all the carbs & ice cream I could find & thought about the day. Then I thought…what does it teach my kids if I quit on my dream? How will they learn to handle real life jerks if I lay down & let them win? How will they learn to conquer their fears & push past it into bigger & better things? So…not today, Trolls. Not ever. I’ve got some little eyes watching me & they deserve my best example. But today, I’ll pray for the hearts of the people who want to see me fall ❤
