Nothing beats a good energy-boosting healthy snack. The easiest tasty deserts to opt for are energy bites. There are so many different recipes online, but the blueberry lemon one is our favorite.
As you can guess by the name, for this recipe you will need 1/2 cup of dried blueberries, 1 1/2 tablespoons of fresh lemon juice and 1 teaspoon of lemon zest. Among other ingredients, you will have to include 1 1/2 cups of cashews, 1/2 tablespoon vanilla extract, 3/4 Medjool dates, and 1/2 cup unsweetened shredded coconut. To finish off, a pinch of sea salt.
You will only need ten minutes to have your blueberry lemon energy bites ready. The first thing you have to do is put the cashews and coconut in a food processor until you get a mixture. During the following step add the dates, blueberries, vanilla extract, lemon juice, lemon zest and a pinch of salt. Process everything together until you get a mixture from which you can form small balls. Taste it to see whether you need to add anything extra to your taste. Once you’re done with making the balls, you can decorate them with coconut and some extra blueberries. The most delicious, healthy snacks that you’ve ever had.
